It is a natural functional oligosaccharide, which mostly exists in trace amounts in animal milk. Lactose was used as raw material β- It is obtained by the action of galactosidase, which is based on the galactose group in lactose molecule β (1-4)、 β (1-6)、 β (1-3) oligosaccharide mixtures bonded to galactose molecules.
The sweetness is 30% ~ 40% of sucrose, and the sweetness is soft and pure
The viscosity is higher than that of sucrose (75brix under the same sugar degree)
It is relatively stable under high temperature and acidic conditions (pH 3.0, 160 ℃, no decomposition for 15min), and can be used in acidic food
It has good moisture retention. When added to baked goods, it not only provides soft sweetness, but also prolongs shelf life
